The fried egg white was (less surprisingly) made from meringue that was crisp yet chewy, with a wonderfully formed hollow for the yolk to sit down in. The fried egg sat on top of a mattress of finely diced fresh apple and strawberry tossed in cream, on a thick gooey layer of lemony custard, all served on top of a skinny slice of toasted brioche. I liked the thought of a rooster dinner as a part of a degustation menu! The log-shaped hen breast was moist and succulent, served on a salty savoury chicken sauce, half a steamed baby carrot on one finish, carrot puree on the opposite.
